This small, unique lot of 100% Caturra Yellow Honey comes from the renowned, multiple COE winning farm, Volcan Azul. Today the farm is managed by Alejo Castro and his son, also named Alejo. The roots of the farm and the commitment to quality coffee, however, go back more than a hundred years. At the end of the 19th century, when coffee production was just beginning in the Americas, without knowing it, two pioneers and entrepreneurs, Alejo C. Jiménez in Costa Rica and Wilhelm Kahle in the south of Mexico, shared the same dream. They wanted to produce the best coffee in the world to satisfy the new, demanding European gourmet market.

A century later, today the fourth and fifth generations of descendants of these visionary farmers still produce coffee within the same ideals of excellence and top quality that inspired their ancestors. They produce exceptional lots of Geisha and Caturra on the slopes of the Poás Volcano in Costa Rica. The farm also has sizeable plantations of Bourbon, SL-28, Watta, Villasarchi, Sarchimor and Venezia Plots are situated amidst unique micro-climates, as the farm has large swathes of rainforests interspersed between the coffee plots. In order to help preserve these forests and the biodiversity they bring, the farm uses no pesticides and only uses fungicides sparingly and when absolutely necessary.

The production process starts with the planting of the coffee trees on highly fertile volcanic soil above 1,200 meters above sea level. Top quality lots from 1,500 metres and above are harvested separately and will be processed separately in order to ensure that the high quality remains intact.

Volcan Azul’s micro-mill is situated on the farm itself, not far from the Caribbean coastline on the slopes of the Poas Volcano. Harvest season begins, usually, in the middle of March. During this time, an additional 1,000 employees will join the farm’s six full- time workers. The mill specialises in four main processes: Red honey or “full honey”,Yellow honey,Natural and Fully washed.
